Brie is perhaps the most famous French cheese and produced in a style that is replicated by creameries the world over. Brie de Meaux has an AOC protection and is made in large wheels from cows milk. Unlike Camembert, the curds are cut before being scooped into the moulds, which results in a sharper, creamier cheese.
